Three Sisters Harvest Stew
Ingredients
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 jalapeno chili, seeded and minced
  • 1 ½ cups cooked kidney or pinto beans or 1 (15 ounce) can low-sodium or no-salt-added beans, drained
  • ½ cup green bell pepper, cut into strips
  • ½ cup red bell pepper, cut into strips
  • 2 cups corn kernels
  • 2 cups low-sodium or no-salt-added vegetable stock
  • 3 cups chopped acorn, butternut or carnival squash, cut into ¾ inch chunks
  • 1 teaspoon ground cumin
  • 1 ½ cups diced tomatoes
  • 1 teaspoon dried oregano
  • ⅛ teaspoon ground pepper
  • 5 ounces spinach
  • ¼ cup raw pumpkin seeds, lightly toasted
