Spinach Salad with Lemon Oil Dressing
A very satisfying, crunchy salad. Goes great with any protein.

Ingredients
  • 1 small container (about 8 cups) Fresh Spinach, Organic!
  • 3 Tbsp Raw Pumpkin Seeds
  • ¼ cup Dried Cherries
  • Lemon Juice
  • Olive Oil, Extra Virgin
  • Pepper, freshly ground
Steps
  1. Wash and chop the spinach.
  2. Combine all but the last 3 ingredients and divide into 4 dishes
  3. Combine lemon juice, olive oil and pepper to your liking, then drizzle over salad just before eating.
Notes
  • Save leftover salad separately from dressing.
