  • 4 tablespoons olive oil or other vegetable oil, divided
  • 1 red onion, sliced
  • 2 bell peppers, cored and sliced (one red bell pepper and one green bell pepper, if possible)
  • 1 jalapeño
  • 8 warm tortillas, to serve
  • 1 avocado, sliced (or guacamole), to serve
  • ½ cup chopped fresh cilantro, to serve
  • ½ cup salsa or pico de gallo, to serve
  • ½ cup sour cream, to serve
