Ginger Orange Carrot Quick Bread

  • ⅔ cup [150 g] vegetable or canola oil
  • ¾ cup [150 g] granulated sugar

  • 2 large eggs, at room temperature
  • 1 ½ tablespoons ginger paste or grated ginger
  • 1 tablespoon grated orange zest
  • 1 tablespoon triple sec or other orange liqueur (optional)
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine salt
  • 1 ½ cups [213 g] all-purpose flour
  • 2 cups peeled and finely grated carrots
  • Sanding sugar, for sprinkling, optional
