One-Pan Shrimp Dinner with Fregula
Ingredients
  • ¼ cup olive oil
  • 2 large shallots diced
  • 3 cloves of garlic minced
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 red bell peppers diced
  • 3 celery stalks diced
  • 3 cups of veg or seafood broth
  • 3 cups water
  • 2 cups of Fregula (Sub with Israeli couscous or Orzo)
  • 24 deveined shrimp with the shells left on
