White Chocolate and Macadamia Biscuits

Ingredients
  • 250g butter, soft
  • 150g raw sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups self raising flour
  • 1 pkt white chocolate bits (250g) OR a 250g block of white chocolate chopped into bits
  • 250g macadamia nuts, chopped roughly
Steps
  1. 1. Pre heat your oven to 160°C (fan forced) and line two large flat baking trays with baking paper or silicon mats
  2. 2. Blitz sugar 5 secs/speed 9, then add butter
  3. 3. Cream butter and sugar 10 to 15 secs/speed 4 (check after 10 secs)
  4. 4. Add vanilla and eggs one at a time through hole in lid while mixing on speed 1
  5. 5. Add flour 1 cup at a time through hole in lid while mixing on speed 1. Once all added increase to speed 4 / 10 sec. I then used a spatula to mix any flour that was not quite mixed in.
  6. 6. Add nuts and choc chips and mix on 5 secs/reverse speed 4. Or use your spatula and mix by hand as the mixture is quite thick.
  7. 7. Roll into small balls and flatten slightly. They will rise and spread a little so don't sit too close together.
  8. 8. Bake for 10 to 15 minutes or until slightly golden
  9. 9. Allow to cool for a few minutes before transferring to a rack to cool completely.
