Chicken and Spinach Lasagna
"While I love a good meaty lasagna, this chicken and spinach lasagna recipe offers an excellent alternative. It's made with a unique combination of ingredients layered with lasagna noodles and baked to perfection.

"Also, it's easy to sneak another vegetable (or two) in, and you're not likely to hear any complaints. Some diced cooked carrots or red bell pepper will add color and flavor. You could even replace the chicken with extra vegetables for a vegetarian lasagna. It's great with Swiss chard as well. See the variations for more."
Ingredients
  • 2 cups shredded mozzarella cheese, divided
  • 2 cans (10 ¾ ounces) condensed cream of mushroom soup
  • 1 ½ cups milk
  • 1 package (10 ounces) frozen chopped spinach
  • 1 large egg
  • ½ cup grated Parmesan cheese, plus more for topping
  • 2 cups ricotta cheese
  • 12 lasagna noodles, cooked and drained
  • 2 to 3 cups diced cooked chicken ( chicken breasts or cooked whole chicken)
