  • ¾ cup frozen peas (thawed)
  • 1 ½ teaspoons salt
  • ¼ teaspoon sugar
  • 1 teaspoon Shaoxing wine (optional)
  • 2 scallions (finely chopped)
  • 2 cups romaine or iceberg lettuce (finely chopped)
  • ⅛ teaspoon freshly ground white pepper
