Stir fried spicy mussels

Ingredients
  • 1 kilo rinced mussels
  • 2 finely chopped hot chillies
  • 5 thinly sliced cloves of garlic
  • 1 finely sliced red onion
  • 5 cm pice of ginger grated
  • 1 lemon juiced and zested
  • 2 tbsps Nam Pla ( fish sauce)
  • 200 ml coconut milk
  • basil

Steps
  1. 1. Heat wok, add canola oil.
  2. 2. Add garlic, chillies, onions and ginger, fry for a minute.
  3. 3. Add the mussels and stir to coat
  4. 4. Add lemon and fish sauce...let cook 2 minutes covered
  5. 5. Add the coconut milk and cook until flavors are developed.
  6. 6. Add the fresh basil, one more minute and serve.
