Caveman Keto Cheesecake
Ingredients
  • subheading: Crust:
  • ¾ Cup Pecans (84g)
  • ¾ Cup Almond Flour
  • 4 Tbsp Butter
  • 2 Tbsp Sweetener
  •  
  • subheading: Filling:
  • 1½ lbs Cream Cheese
  • 4 Eggs
  • ½ Tbsp Liquid Vanilla
  • ½ Tbsp Lemon Juice
  • 1 Cup equivalent of sugar substitute
  • ¼ Cup Sour Cream
Steps
  1. For crust: Crush pecans in a bag, mix in melted butter and dry ingredients. Pack into a pan and cook 7 minutes on 400 degrees.
  2. Take everything out ahead of time to get to room temperature.
  3. Mix everything except eggs until smooth.
  4. Add one egg at a time and don't overmix (to minimize air).
  5. Add mixture to pan and let settle, put in oven at 400 degrees and immediately turn to 300 for 60 minutes. Then turn oven off and leave in there for another 30 to 60 minutes (so it cools slowly).
