Ingredients
  • 4 servings brown rice (3 cups cooked), cooked according to the package directions
  • 1 avocado, diced
  • ½ cup chopped fresh cilantro
  • ⅓ cup roasted peanuts, chopped
  • 2 tablespoons soy sauce
Steps
  1. Mix all the ingredients in a large bowl. Serve warm or cold.
Notes
  • If making this dish in advance, wait to add the peanuts just before serving.
