Pressure Cooker Basic Beef Stew
Ingredients
  • 1 teaspoon vegetable oil
  • 5 pounds of beef chuck, trimmed and cut into 1 ½ inch cubes
  • 1 tablespoon kosher salt
  • 2 medium onions, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced or pressed through a garlic press
  • 2 tablespoons tomato paste
  • Leaves from 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • ½ teaspoon baking soda (optional, helps brown the meat in the heat of the pressure cooker)
  • 1 teaspoon kosher salt
  • ½ cup red wine
  • 1 cup chicken stock (preferably homemade)
  • 15 oz can diced tomatoes
  • 1 pound carrots, peeled and cut into 3 inch lengths
  • 1 ½ pounds new potatoes, scrubbed
