Ingredients
- I only made a gallon of this one, I wish I made more. I used 3 lbs of wildflower honey to 1 gallon of water and let it ferment all the way out. I used a red wine yeast, so abv is sitting about 14%. After fermentation, I tossed in 2 halved vanilla pods that had been soaking in about 4 oz of local bourbon for about a month. I let that sit for a couple months before racking into my clearing vessel for about 2 months. The vanilla hits you up front with a real warm flavor then is followed by a mellow honey bourbon flavor to finish. It's definitely the best mead I've ever made. It's a fantastic semi-sweet.
