Vegan Breakfast Casserole
Ingredients
  • 4 frozen hash brown potato patties, defrosted*
  •  
  • 1 bottle of JUST Egg ( or mung bean recipe)
  • ½ tablespoon olive oil
  • ¼ medium yellow onion, diced
  • ¼ red pepper, diced
  • 1 vegan sausage, chopped (I use beyond hot or mild italian)
  • 1 green onion , diced
  • 2 tablespoons canned chopped green chilies
  • ¼ teaspoon italian seasoning
  • ¼ teaspoon poultry seasoning
  • ¼ teaspoon dry mustard
  • ½ cup vegan cheddar cheese shreds
  • ½ cup small grape tomatoes, sliced in half
  • ½ teaspoon black salt
  • Optional: fried mushrooms, zucchini, spinach
