Ingredients
- 16 oz baby Bella/Cremini (sliced)
- 1 potato (peeled and cubed)
- ¼ stick butter
- 3 cups broth
- ¼ onion (chopped)
- Few cloves garlic (chopped)
- ¼ cup flour
- 1 tbsp cooking wine
- 1 cup heavy/whipping cream
- (1) Sauté mode: melt butter and stir in mushroom to coat, add potato and onion, stir and cook till soft about 5 minutes (optional: reserve some mushroom pieces for garnish)
- (2) add garlic
- (3) add flour, stir till flour absorbs some liquid
- (4) add cooking wine
- (5) add broth
- (6) Press Cancel and turn on Manual High Pressure for 5 minutes. Cover and seal.
- (7) NPR 5 minutes then QR
- (8) Slowly open cover, use Hand Blender to chop up mushroom in the pot. I like it coarsely chopped for crunch factor
- (8) Slowly stir in cream to desired thickness.
- (9) Add seasoned salt and black pepper to taste.
