Instant Pot - Creamy Mushroom Soup
Ingredients
  • 16 oz baby Bella/Cremini (sliced)
  • 1 potato (peeled and cubed)
  • ¼ stick butter
  • 3 cups broth
  • ¼ onion (chopped)
  • Few cloves garlic (chopped)
  • ¼ cup flour
  • 1 tbsp cooking wine
  • 1 cup heavy/whipping cream
  •  
  • (1) Sauté mode: melt butter and stir in mushroom to coat, add potato and onion, stir and cook till soft about 5 minutes (optional: reserve some mushroom pieces for garnish)
  • (2) add garlic
  • (3) add flour, stir till flour absorbs some liquid
  • (4) add cooking wine
  • (5) add broth
  • (6) Press Cancel and turn on Manual High Pressure for 5 minutes. Cover and seal.
  • (7) NPR 5 minutes then QR
  • (8) Slowly open cover, use Hand Blender to chop up mushroom in the pot. I like it coarsely chopped for crunch factor
  • (8) Slowly stir in cream to desired thickness.
  • (9) Add seasoned salt and black pepper to taste.
