Roasted Pumpkin and Garlic Dip
Ingredients
  • 750g butternut pumpkin cut into pieces
  • 3 cloves garlic
  • sprinkle salt
  • paprika
  • 60g Parmesan cheese, cut into large chunks
  • 150g cashews (plain, unsalted)
  • 40g Extra Virgin Olive Oil (you will need extra for roasting)
  • 1 tsp chilli powder
  • 20g white vinegar
