Artichoke Manicotti in Pesto Cream

  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp dried oregano

  • 2 Tbsp pine nuts
  • 2 cup packed fresh basil leaves
  • 1 cup heavy cream
  • 2 Tbsp olive oil
  • 2 Tbsp freshly grated Parmesan cheese, plus more as desired
  • 2 clove garlic, chopped
