Acem Pilawi (Ottoman Pilaf)
Ingredients
  • 4 tablespoons (55 g) butter
  • 1 ½ lbs (680 g) lamb or mutton, cut into very small pieces
  • 3 onions, finely chopped
  • 1 cup (235 ml) warm water
  • 2 cups (370 g) baldo rice*
  • 2 tablespoons salt
  • ½ cup (60 g) currants
  • ½ cup (70 g) pistachios
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon cloves
  • 1 ½ teaspoons cardamom
  • A generous pinch of salt
  • 3 cups (700 ml) cool water

  • note: This is the kind of rice that is used in Türkiye for this dish, but you can use any rice that you have.
