Chickpea Salad(With Eggs and Feta)
Ingredients
  • 15 ounce can chickpeas drained and rinsed
  • 2 small tomatoes diced
  • 3 small cucumbers cut into half moons
  • ½ red onion finely sliced
  • ½ red bell pepper diced
  • 1 avocado cut into cubes
  • 3 hard-boiled eggs grated with a microplane or finely chopped
  • ¼ cup feta cheese crumbled
  • 1 tablespoon fresh parsley finely chopped
  • salt and pepper to taste

  • ¼ cup olive oil
  • 1 lemon juiced, check notes
  • 2 teaspoons honey or to taste
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Italian seasoning
