6 lbs pork back ribs

Pat dry with paper towels and remove the membrane.

Brush with 4 tbsp mustard, on both sides

subheading: Dry rub:

¼ cup brown sugar

2 tsp ground black pepper

3 tsp sea salt

2 tsp smoked paprika

1 tsp sweet paprika

1 tsp ground cumin

1 tsp chilli powder

1 tsp onion powder

1 tsp garlic powder

1 tsp dry thyme

Refrigeratefor 4 hours or overnight

subheading: Barbecue sauce:

2 tbsp oil

1 small onion, finely diced

2 cloves of garlic, pressed

½ cup Kentucky bourbon. After adding the bourbon cook until all the alcohol evaporates, about3 minutes

¼ cup brown sugar

⅓ cup apple cider vinegar

2 tbsp Worcestershire sauce

1-¼ cup ketchup

Salt, black pepper, hot pepper flakes
