Jiggly Japanese Cheesecake
Ingredients
  • 180 g ( ¾ cups) Cream cheese Philadelphia
  • 30 g ( 2 tablespoons) Unsalted butter
  • 50 g ( ⅕ cups) Whole milk
  • 35 g ( ⅓ cups) Pastry flour Ideally use low protein content flour. Can be substituted with all purpose flour
  • 10 g ( 1¼ tablespoon) Corn starch
  • Pinch of salt
  • 75 g Egg yolk yolk of approx 4 eggs
  • 125 g Egg white white of approx 4 eggs
  • 50 g ( ¼ cups) Superfine sugar
