  • 1 medium onion halved and sliced into ¼-inch pieces
  • 2 medium red bell pepper
  • 2 medium sweet potatoes peeled and diced, about 4 cups (1½ pounds)
  • 3 cloves garlic crushed
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 dash cinnamon
  • 12 eggs
  • 1 tablespoon ghee
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • scallions thinly sliced, for garnish
