Vegan Wild Rice Soup in the Instant Pot
Ingredients
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup dried chickpeas, (garbanzo beans) soaked for a few hours or overnight, then rinsed
  • 1 cup wild rice, rinsed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth , or water
  • 1 cup water
  • salt and pepper, to taste
  • subheading: For the cashew cream:
  • ½ cup raw cashews, (soaked for 30 minutes in hot water if you don't have a high speed blender)
  • ½ cup water
