Pink Potato Salad with Red Cabbage and Pomegranate
Ingredients
  • 600g baby new potatoes, halved
  • Salt and black pepper
  • ½ red cabbage, shredded
  • 200g pomegranate seeds (ie, the seeds from 1 pomegranate)
  • 1 x 400g tin butter beans (or, even better, from a jar)
  • 100g mayonnaise
  • 50g yoghurt
  • 3 tbsp extra-virgin olive oil
  • Juice of ½ lemon
  • 15g flat-leaf parsley, roughly chopped, to serve
