Ingredients
- I like to make salt and vinegar roasted potatoes. Basically, you brine thick cut rounds of russet potatoes in a vinegar/water mixture with a lot of salt (like mostly vinegar) for a few hours, then you transfer the potatoes and brine to a pot and bring to a boil and let it boil for like 8 minutes. Then drain, toss the potatoes in oil with salt and pepper and oven roast until the outside is super gold and the inside is fluffy. It ends up crispy on the outside, the inside is fluffy like mashed potatoes and the vinegar flavor ends up penatrating the center.
