Gluten-Free Chewy Ginger Molasses Cookies
Ingredients
  • 2 tablespoons palm shortening or unsalted butter
  • ¼ cup unsweetened almond butter or sunflower seed butter
  • ⅓ cup coconut sugar
  • 1 tablespoon honey
  • 1 tablespoon molasses or maple syrup
  • 1 large egg*
  • 2 teaspoons vanilla extract
  • 1 teaspoon fresh lemon juice
  • ¼ cup coconut flour
  • ¼ cup arrowroot powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon baking soda
  • note: for egg-free, omit the egg, and reduce coconut flour and arrowroot powder to 2 tablespoons each. This version will be more crisp than chewy.
