  1. Cream together ½ cup softened butter, ½ cup erythritol, and one teaspoon of vanilla. Then mix in two eggs, two teaspoons of baking powder, a pinch of salt, and two-and-a-half cups of almond flour. You can add a milk of your choice - about ¼ cup - if the dough is crumbly. Refrigerate the dough for at least an hour before rolling it out into a sheet form that's one-fourth to- half-an-inch thick, and use cookie cutters to make fun shapes. Christmas trees, snowflakes . . . take your pick!
  2. You'll want to bake these beauties for eight to 10 minutes at 375 degrees. For the frosting, cream together six tablespoons of softened butter, one teaspoon of vanilla, and four cups of powdered erythritol. Adding milk to this is optional, but you may need it for consistency purposes, Maddux said. It appears that she used food coloring as well, then decorated her cookies to finish off the batch.
