Spicy One-Pot Lentil Dal
Ingredients
  • 1 tsp. Coconut Oil
  • 2 white onions (finely chopped)
  • 4 cloves garlic (finely chopped)
  • Spices: ½ tsp. turmeric, ½ tsp. ground cumin, 1 tbsp. medium curry powder
  • 1 cup (dry weight) puy lentils
  • 15.5 oz. canned chickpeas (260g drained weight)
  • 1 head broccoli (cut into florets)
  • Half of 15 oz. can chopped tomatoes
  • 1 vegetable stock cube
  • 1 tsp. black pepper
  • ½ lemon (juice)
  • 1 cup basmati or long grain rice
