Black Bean, Sweet Potato, Quinoa Veggie Burgers
Ingredients
  • ⅓ cup raw quinoa
  • 1 cup vegetable broth
  • 1 ½ cups cooked black beans (or 1 can of black beans (see below))
  • Salt and pepper
  • ½ cup breadcrumbs
  • ¼ cup red bell pepper ( finely diced)
  • ¼ cup green onion ( finely diced)
  • 1 egg
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika (or regular paprika)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil
  • subheading: Seasoning Canned Black Beans:
  • 1 to 2 tablespoons olive oil
  • ½ cup chopped onions
  • 1 teaspoon minced garlic
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 1 teaspoon smoked paprika (optional)
  • Salt to taste
  • Pepper to taste
