Three Cup Chicken (San Bei Ji)
Ingredients
  • 15 ml sesame oil
  • 30 ml vegetable oil
  • 6 slices ginger
  • 5 cloves garlic (sliced)
  • 1 dried chili (halved)
  • 1 kg chicken wings (cut at the joint where the drumette and the wingette meet, wing tips discarded. You can also use 1 ¾ pounds/800g of pre-cut chicken drumettes and wingettes)
  • 60 ml warm water
  • 60 ml shaoxing wine
  • 10 to 25 ml dark soy sauce
  • 22 ml light soy sauce
  • 8 g sugar
  • Small bunch of Thai basil leaves or 2 scallions, cut into 2-inch/5cm lengths (or both!)
