Zoodle Alfredo
  • 1 lb. bacon, chopped
  • 2 shallots, chopped
  • 4 cloves garlic, minced
  • ½ cup white wine
  • 1½ cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for garnish
  • 2 to 3 zucchinis for noodles
  • Kosher Salt
  • Freshly ground black pepper
  1. In a large skillet over medium heat, cook bacon until crispy, 8 minutes.
  2. Drain on a paper towel-lined plate.
  3. Pour off all but 2 tablespoons of bacon, then add shallots . Cook until soft, about 2 minutes, then add the garlic and cook until fragrant, about 30 seconds.
  4. Add wine and cook until reduced by half.
  5. Add heavy cream and bring mixture to a boil. Reduce heat to low and stir in Parmesan.
  6. Cook until sauce has thickened slightly, about 2 minutes.
  7. Add zucchini noodles and toss until completely coated in sauce. Remove from heat and stir in cooked bacon.
