  • 4 tablespoons filtered water
  • For the oven-roasted vegetables:
  • 2 zucchinis
  • 2 yellow squash
  • 1 clove garlic
  • 1 red onion
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • feta cheese
  • 5 fresh mint leaves, optional
