  • 1 cup roughly chopped Persian cucumber (from 2 cucumbers)
  • ½ cup plain Greek yogurt
  • ⅓ cup tahini
  • ⅓ cup fresh lemon juice (from 3 lemons)
  • 2 tablespoon extra-virgin olive oil
  • 1 garlic clove, roughly chopped
  • ½ teaspoon sea salt
  • Salad
  • 4 cups loosely packed arugula
  • 2 cups cooked quinoa, room temperature
  • 2 cups shredded red cabbage
  • 2 Persian cucumbers, thinly sliced
  • ¼ cup fresh cilantro leaves
  • 1 cup golden raisins
