Ingredients
  • 600 g chicken thigh fillets, skin-on
  • 2 tbsp light soy sauce
  • 2 tbsp sake
  • ½ tsp sugar
  • ¾ cup potato starch (or substitute cornstarch)
  • Vegetable oil, for deep-frying
  • Japanese mayonnaise, to serve
  • Lemon wedges, to serve
  • subheading: For the herb and spice mix:
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 tsp celery salt
  • ½ tsp ground black pepper
  • 1 tsp ground white pepper
  • ½ tsp dried mustard powder
  • 2 tsp ground paprika
  • 2 tsp garlic powder
  • ½ tsp ground ginger
  • 1 tbsp chicken stock powder
