Mashed Potato Pancakes
Ingredients
  • 1 pound potatoes, (about 4 medium-sized potatoes), boiled, peeled, and quartered
  • ¼ cup milk
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 8 to 10 ounces baby spinach
  • 3 cloves garlic, minced
  • salt and fresh ground black pepper, to taste
  • 1 cup shredded parmesan cheese
  • 2 tablespoons lemon juice
  • 1 large egg, lightly beaten
  • 2 cups panko crumbs
  • ¼ cup vegetable oil, for frying (add more as needed)
