  • 2 ounces wood ear mushroom dried (also known as pepeao)
  • ½ teaspoon avocado oil
  • ½ yellow onion diced
  • 1 jalapeño minced (remove seeds and membranes to remove the spice), omit for nightshade-free
  • 3 cloves garlic minced
  • 3 tablespoons ginger freshly grated
  • 1 ½ pounds ground beef lean
  • 1 cup brown mushrooms high in vitamin D, minced
  • 4 cups cabbage shredded
  • 2 cups broccoli slaw
  • 1 medium carrot shredded
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup low sodium gluten-free soy sauce or ⅓ cup coconut aminos
  • ½ to 1 teaspoon stevia glycerite omit if using coconut aminos
  • 1 tablespoon rice vinegar
  • 2 teaspoons yeast extract spread optional but adds umami and nutrition
  • 1 tablespoon toasted sesame oil
  • 4 green onions sliced
  • 1 tablespoon sesame seeds toasted
  • ¼ cup cilantro for garnish
  • 4 cups butter lettuce
