Köttbullar (Mom's Swedish meatballs)
Ingredients
  • subheading: Meatballs:
  • 2 c bread crumbs (about 3 slices day old bread)
  • ⅔ c milk
  • ½ c minced onion
  • 4 tbs butter
  • 1 lb ground pork
  • 1 lb ground beef
  • 3 eggs, slightly beaten
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tsp nutmeg
  • 1 tsp paprika
  •  
  • subheading: Gravy:
  • 1 tbs concentrated meat extract (broth?)
  • 3 tbs flour
  • 1 c water (more for gf flour)
  • 1 c sour cream
  •  
  • subheading: Garnish:
  • 2 tsp minced parsley
Steps
  1. Soak bread crumbs in milk until softened
  2. Saute onion in 1 tbsp butter about 3 minutes
  3. subheading: Combine until smooth:
  4. Milk mixture
  5. Onion
  6. Meat
  7. Eggs
  8. Salt
  9. Pepper
  10. Nutmeg
  11. Paprika
  12. Pan fry meatballs in remaining butter
  13. subheading: Gravy:
  14. Add water and a few grains of pepper to the frying pan
  15. Cook until thickened
  16. Cook 5 minutes on very low
  17. Stir in sour cream in tablespoon batches until blended
  18. Return balls to gravy and cook gently 10 minutes
  19. Garnish with parsley
