Sheet Pan Maple Soy Glazed Tofu and Noodles
Ingredients

  • 1 to 2 tsp chili garlic sauce
  • 1 (~450 g) block of super firm tofu or pressed extra firm tofu

  • 1 clove garlic, crushed
  • ½ inch piece of ginger, peeled and finely minced
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce, I used a gluten-free variety
  • 2 tbsp maple syrup
  • 1 tbsp rice wine vinegar
  • 1 tsp cornstarch
  • 2 tbsp water

  • Noodles and Vegetables
  •  
  • 4 servings of rice noodles
  • 1 medium bok choy, chopped
  • 1 cup broccoli florets
  • 1 red bell pepper, roughly chopped
  • 1 tbsp of avocado oil
  • Salt as needed
