Leonard's Championship Chili (Instant Pot)

Ingredients
  • 3 pounds Chuck Roast
  • ½ pound spicy Italian sausage, casing removed
  • 1 medium onion, diced
  • 1 jalapeno, diced
  • 2 garlic cloves, minced
  • 2 cans (14.5 oz) diced tomatoes
  • 1 can (16 oz) tomato sauce
  • 1 can (8 oz) tomato paste
  • 2 cups chicken broth
  • 1 can (7 oz) diced green chile
  • 2 TBS Chili Powder
  • 1.5 tsp cumin
  • 1.5 tsp oregano
  • ½ tsp ground cinnamon
  • ½ oz semisweet chocolate
  • 1.5 tsp hot sauce
  • 2 bay leaves
  • salt, pepper and cayenne pepper to taste
Steps
  1. 1) Trim all fat from chuck roast, cut into ½” cubes
  2. 2) Turn Instant Pot to Saute, when hot add 1 TBS oil, diced onion and diced jalapeno
  3. 3) Add 2 garlic cloves, sausage, and chuck roast. Brown well
  4. 4) Add all remaining ingredients except salt, pepper, cayenne
  5. 5) Turn Off Instant Pot, and Turn back on to Beans/Chili mode (30 min default)
  6. 6) NPR until pressure released, 15 to 20 minutes, then QR if necessary
  7. 7) Taste and adjust seasoning with salt, pepper, cayenne
  8. 8) Serve with cheese and onions, over spaghetti or rice, baked potatoes, or eggs. Or my favorite, on top of Fritos corn chips. Always better the next day, and also freezes well.
  9. 9) Remember, chili is a personal creation that you should experiment with and create your own version of Championship Chili.
