Baked Beetroot & Kumera

Ingredients
  • 2 medium gold and orange kumara (sweet potato) 2 red onions, peeled and cut into wedges
  • 3 beetroot, unpeeled and cut into wedges
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 4cm sprig of rosemary, chopped Freshly ground black pepper
Steps
  1. Prep 15 minutes. Cook 35 mins
  2. Place the prepared vegetables in a baking dish.
  3. Mix the oil, lemon juice, rosemary and black pepper.
  4. Pour over the vegetables and mix to evenly coat.
  5. Bake at 200 deg c for 25 to 35 minutes or until tender and golden brown.
