Ingredients
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ⅛ cup sugar or ¼  if you just need a shade sweeter ( still not sweet like corn muffins though!)
  • 4tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • ¼ cup vegetable or canola oil
  • cooking spray or butter to coat  the pan
