Low Carb Keto Friendly Coconut Bomb Cooked with Desiccated Coconut and Saffron
Barfi is one of the most popular Indian desserts. The most common preparation method is to thicken milk with sugar and other spices, spread out in a shallow dish and cut to desired shapes and sizes. But don’t worry; we are not going to use any milk or sugar for this recipe ☺ We are going to add the flavours of green cardamom and the all famous Saffron to make our barfi and the accompanying sauce super yummy ☺ Here’s my recipe for low carb keto friendly coconut bomb topped with thick saffron sauce:)
Ingredients
  • subheading: INGREDIENTS FOR BOMB:
  • Unsweetened desiccated coconut - 60 gms
  • Unsweetened coconut milk - 140 ml
  • Ghee - 45 ml
  • 6 to 7 saffron threads
  • 4 tsps of stevia - adjust it to your tastebuds
  • 60 ml thick/heavy cream
  • 20 gms of cream cheese
  • ½ tsp green cardamom powder
  • subheading: INGREDIENTS FOR SAFFRON SAUCE:
  • 30 ml unsweetened coconut milk
  • 4 to 5 saffron threads
  • 40 ml thick/heavy cream
