Twice Baked Potatoes

Ingredients
  • 3 medium/large baking potatoes
  • ½ cup reduced sodium chicken broth
  • ½ cup 0% Fage Greek yogurt
  • 1 cup fat free cheddar
  • 1tsp Dijon mustard
  • ⅓ cup thin sliced green onions
  • ¼tsp paprika
Steps
  1. Bake your potatoes. When done, scoop out insides. Leaving ¼ inch edge. Beat potatoes, broth, Greek yogurt, mustard, onions, and ½ cup cheese.  Spoon into skins. Top with remaining cheese and paprika. Bake at 400, for 20 minutes.
