½ cup (156g) Grade A very dark maple syrup (cooking maple syrup)

3 large eggs, lightly beaten

3 tablespoons (43g) good bourbon, optional

2 teaspoons finely grated fresh ginger

1 teaspoon ground ginger

¼ teaspoon fine sea salt

1 ½ cups (170g) pecan pieces

¼ cup (43g) mini diced ginger
