These no-bake bars have all the flavours of a classic carrot cake but made only with wholesome vegan ingredients. This recipe is very quick and easy and doesn’t require a food processor. These bites are a healthy snack to eat on the go and excellent to put in kids lunchboxes, providing a great source of energy.
Ingredients
  • 60g coconut oil
  • 60g almond butter, or any other nut butter of your choice
  • 4 tbsp maple syrup, or any other syrup of your choice
  • ½ tsp cinnamon
  • 150g rolled oats
  • 60g walnuts, roughly chopped
  • 100g carrots, peeled & finely grated
  • 40g dairy-free white chocolate
  • pinch of salt
