Frozen Shell On Shrimp Boil

  • FROZEN SHRIMP. I love a good shrimp and pasta salad in the summer, and I seem to collect bags of shrimp that were on sale. Today I took one out of the freezer that had a lot of crystals on the shrimp, rinsed off the crystals, and dumped the whole bag, shrimp in shells, into my 6-quart pot. Added 2 cups of water and seasoned with Old Bay and salt, like a crab boil. These were 16 to 20 size shrimp, and I cooked them 8 minutes after pressure was reached, then did a quick release, drained and rinsed, and have enough for two salads. The shells come off quite easily, and the shrimp got the benefit of cooking in the shell. Of course I made the shell pasta in my 3 quart pot also. My current favorite dressing is what I use for fish tacos: ½ cup cole slaw dressing, ¼ cup sour cream, 1 tbs. sriracha. Salt and pepper depending on how salty your pasta and shrimp are. Also chopped some of the shrimp with fresh tomatoes and green onion, same dressing, and filled these round gyoza sheets that were pre baked in my muffin tin.
