Sweet and Spicy Salmon Bowls (30-Minute Recipe)
Rice needed some herbs to liven it up.
Ingredients
  • subheading: Simple sweet chili sauce:
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • ⅓ cup fig spread or more, for thickening the glaze (I prefer to use Divina brand)
  • red pepper flakes to taste
  • subheading: Salmon:
  • 24 oz salmon fillets (4 salmon fillets)
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • salt and pepper
  • subheading: Mango salsa:
  • 2 mangos mangos ripe, peeled, pitted, and diced
  • 1 sweet red bell pepper small, diced
  • ½ bunch fresh cilantro chopped
  • 2 tablespoons freshly squeezed lime juice
  •  
  • ¼ teaspoon chili powder  or more
  • salt and pepper to taste
  • subheading: Rice:
  • 2 cups cooked rice I used Jasmine rice
  • subheading: Garnish:
  • 1 lime sliced
  • fresh cilantro chopped
