Plättar (Mom's Swedish Pancakes)
- 3 eggs
- 1 cup flour
- 2 cups half and half
- note: for GF flour use slightly more hydration
- 6 tablespoons unsalted butter, melted
- ½ teaspoon salt
- Beat the eggs together with ½ cup of the milk for 2 to 3 minutes.
- Add the flour all at once and beat to a heavy, smooth consistency.
- Beat in the remaining milk and then the melted butter and salt.
