Air-Fryer Roast Potatoes

  • 2 pounds ( 1 kg) russet potatoes
  • ¼ teaspoon baking soda
  • 1 tablespoon plus 1 ¼ teaspoon Diamond Crystal kosher salt, divided, plus more to taste; for table salt, use half as much by volume or the same amount by weight
  • 3 tablespoons (45ml) extra-virgin olive oil, duck fat, goose fat, or beef fat
  • 2 medium cloves ( 10 g) garlic, finely chopped
  • 1 ½ teaspoons finely chopped fresh rosemary or thyme leaves
  • ½ teaspoon freshly ground black pepper, divided, plus more to taste
  • 2 tablespoons finely chopped fresh flat-leaf parsley
