Tom Keller's Potato Leek Soup
Ingredients

  • Large saute pan or saucier
  • Knife and cutting board
  • Potato peeler
  • Cheesecloth and kitchen twine for an herb sachet (optional)
  • Blender- I used my Vitamix Professional Series 300

  • but any sturdy blender will do.

  • This recipe uses fantastic herbs, which you can wrap in a cheesecloth sachet.
  • subheading: Ingredients (serves 6 to 8):
  • 3 large leeks
  • 4 tablespoons unsalted butter
  • ½ cup sliced shallots
  • ⅓ cup sliced onions
  • 1 lb (about 1 large) potato, peeled
  • 1 tablespoon minced garlic
  • 5.5 to 6.5 cups chicken (or vegetable) broth
  • ¾ cup heavy cream
  • Salt and freshly ground pepper
  • Fresh OR dry herbs: 2 sprigs thyme, ½ cup minced chives, 2 sprigs parsley, 2 bay leaves
